Schweitzer x Marcolini - 40 years later

40 years after the successful renovation of the Marcolini butcher shop in Grezzana (Northern Italy), the former project manager, Christian Solderer, returns to the store to meet with Mrs. Marcolini senior and the current managing director, Mr. Marcolini junior, Michele Marcolini.

During the conversation, the master butcher highlights how well the counters have held up over the decades and how the thoughtful design and high-quality craftsmanship have contributed to the store's lasting attractiveness and functionality.

In addition to reflecting on the project from four decades ago, current industry topics are also discussed. The ongoing labor shortage, which is increasingly affecting the industry, is particularly addressed. The butcher shares the challenges of finding qualified staff and explains how the requirements for employee training and development have evolved over the years. Additionally, the discussion covers how the butchery profession has transformed in general, with a shift toward more innovation and specialization, while still maintaining a deep respect for traditional craftsmanship methods.

Mr. and Mrs. Marcolini emphasize their great satisfaction with the collaboration with Schweitzer. The precise planning, high-quality products, and excellent service fully met their expectations. Michele Marcolini openly expresses that he would certainly be willing to work with Schweitzer again in the future to benefit from the expertise and innovative solutions of the South Tyrolean company.
